Ugh! Dinner Again? That is usually how I feel at the time of day when I have to figure out what pantry ingredients I can concoct into a meal. I have even been known to google my on-hand ingredients to get a recipe that fits. This doesn’t always work.
Like a couple years ago when I had ground beef and BBQ sauce. I found a recipe online for meatloaf with BBQ sauce. (This is the time when my friends are moaning.) I whipped it up. The weather was lovely so we were going to eat outside. I had a baby on my hip as I passed out my new delicacy. That’s when I realized that I had the sauce on my finger. I did as any woman would do. I licked my finger. That’s when I noticed it was all down my arm. “Oh, great!” I moaned. That’s when I realized that it wasn’t BBQ sauce at all… it was diaper sauce from the child on my hip. That’s right. My meatloaf was indistinguishable from what was coming out of my child’s diaper and I ate it. Needless to say that recipe NEVER gave a repeat performance.
The good news – sometimes I do find a gem. When you are cooking for… well… more than one, finding a recipe that will appeal to the group is a challenge, especially when there are kids in the group. So today I want to share a recipe that WORKED! Even my picky eaters ate it. It was fun to cook and made the kitchen smell great all day. Don’t freak out but its Creamy Mushroom and Chicken Soup.
