Ugh… Dinner Again?

Ugh! Dinner Again?  That is usually how I feel at the time of day when I have to figure out what pantry ingredients I can concoct into a meal. I have even been known to google my on-hand ingredients to get a recipe that fits.  This doesn’t always work.

Like a couple years ago when I had ground beef and BBQ sauce.  I found a recipe online for meatloaf with BBQ sauce. (This is the time when my friends are moaning.)  I whipped it up.  The weather was lovely so we were going to eat outside.  I had a baby on my hip as I passed out my new delicacy.  That’s when I realized that I had the sauce on my finger.  I did as any woman would do.  I licked my finger.  That’s when I noticed it was all down my arm. “Oh, great!”  I moaned. That’s when I realized that it wasn’t BBQ sauce at all… it was diaper sauce from the child on my hip.  That’s right.  My meatloaf was indistinguishable from what was coming out of my child’s diaper and I ate it. Needless to say that recipe NEVER gave a repeat performance.

The good news – sometimes I do find a gem.  When you are cooking for… well… more than one, finding a recipe that will appeal to the group is a challenge, especially when there are kids in the group.  So today I want to share a recipe that WORKED!  Even my picky eaters ate it.  It was fun to cook and made the kitchen smell great all day.  Don’t freak out but its Creamy Mushroom and Chicken Soup.

    What You Need

    1-1/2
    lb. boneless skinless chicken breasts, cut into bite-size pieces
    1
    can (14-1/2 oz.) chicken broth
    2
    cups elbow macaroni, uncooked
    1/2
    lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes
    1
    pkg. (16 oz.) frozen chopped broccoli, thawed
    Make It

    COOK chicken in large nonstick skillet on medium-high heat 5 to 7 min. or until done, stirring occasionally.
    STIR in broth. Bring to boil. Stir in macaroni; cover. Simmer on medium-low heat 8 to 10 min. or until macaroni is tender.
    ADD VELVEETA and broccoli; cook 4 to 5 min. or until VELVEETA is melted and broccoli is heated through, stirring frequently.
    Kraft Kitchens Tips

    Substitute
    Prepare using 2% Milk VELVEETA.
    Shortcut
    Substitute 1 pkg. (6 oz.) OSCAR MAYER Deli Fresh Grilled Chicken Breast Strips for the cooked fresh chicken chunks. Bring broth to boil in large skillet. Stir in macaroni; cover. Simmer on medium-low heat 8 to 10 min. or until macaroni is tender. Add chicken breast strips, VELVEETA and broccoli. Cook until mixture is heated through and VELVEETA is melted, stirring frequently.

    Variation
    Substitute 1 pkg. (16 oz.) frozen vegetable blend or 1 pkg. (10 oz.) frozen chopped spinach, thawed and drained, for the frozen chopped broccoli; and 1 pkg. (8 oz.) any flavor KRAFT Cheddar CLASSIC MELTS for the cut-up VELVEETA®.

    (Really) Unhealthy Recipe – Spicy Ranch Fried Chicken
    In one bowl I mix together flour, salt & pepper, garlic powder and cajun seasoning (all to taste). In another bowl I mix together milk and a ranch seasoning packet. After washing and drying the chicken tenderloins, I dredge them one by one in the milk then flour. Then I do it again (back into the milk and then back into the flour). I put them on wax paper and let them sit for a few minutes while I get my oil hot (about 375 degrees). In small batches, I fry them for 8-10 minutes TURNING ONLY ONCE. Sit on paper towels to allow the grease to drain.

    Health(ier) Recipe – Shoyu Chicken
    In a large bowl I mix 1.5 cups of soy sauce, 1.5 cups of water, 1 cup of splenda or sugar, onion powder, pepper and 1 TBSP ground ginger. Put in crockpot with chicken thighs or breasts (I usually use scissors to cut them into stir-fry sized pieces first) and cook on high for 4 hours or on low for 6-7 hours. When it’s done I serve it over brown rice with stirfry vegetables.

    Easy Baked Ziti
    Brown 1 lb of meat (usually spicy italian sausage)
    Drain meat and add 1 large or 2 small jars of favorite spaghetti sauce (I usually use Ragu mushroom and green pepper)
    Cook 1 pkg of ziti noodles (following pkg instructions for al dente)
    Mix together noodles and sauce
    Spray a 13×9 baking dish with cooking spray and put 1/2 of the noodles and sauce in the bottom.
    Top with a layer of sour cream (I usually use 1 medium sized container) and a layer of shredded mozzerella cheese.
    Put the other 1/2 of the noodles and sauce on top.
    Top with more mozzerella cheese
    Cover with foil and bake on 350 for 30-40 minutes

    Diaper sauce! Aaaauuuggghhh!

    I remember one time my mother tried a recipe she found that would use up some leftover chopped ham. The recipe was called “Ham Shortcake.” It had a mustard gravy. It was N-A-S-T-Y. And in a family where you were always expected to eat our food regardless of whether we liked it … you know it was bad when the entire thing got dumped in the trash! 🙂 She’s an excellent cook, though, and this was the exception. I’ve had my share of disaster recipes too … like one for noodles in the crock pot. Mush!

    #1 crowd pleaser in the Preston Household. (Especially me because it’s so easy.)

    Crockpot Enchilada
    Mix together 1 can each:
    Chili w/beans
    Diced tomatoes w/juice
    Refried beans

    You’ll also need:
    Sour cream
    Corn tortillas
    Shredded cheese
    Corn chips

    Spread sour cream on corn tortillas, layer corn tortillas, canned mixture, corn chips, cheese, repeat to top. Final layer tortillas, cheese, cover, high for 1 hour, or until top payer of cheese is melted.

    Kids’ favorite dish:

    Rotini pasta (cook as directed)
    Canned vegetables (whatever you prefer, we use green beans, carrots, diced tomatoes -drained-, black olives, and corn and then I throw some cooked broccoli in there too.)
    Canned chicken
    Stir veggies and pasta together, pour 1/2-3/4 bottle of cucumber ranch (or reg ranch) over all of it, mix together. Enjoy!
